Green Muffins
We can’t get enough of this green muffin recipe based on a recipe by @pamelasalzman. These muffins are irresistibly good and are bound to become a household favorite! When made with Maker, they’re dairy-free, and they're just as good with gluten-free flour as they are with wheat flour!
Ingredients:
- 2 Cups Flour (Conventional or Gluten-Free)
- 2 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/2 Tsp Sea Salt
- 1 Large Egg
- 1/2 Cup Pure Maple Syrup (Grade A or B)
- 2 1/2 Tbsp Maker Powdered Oat Milk
- 3/4 Cup Water
- 1/4 Cup Coconut Oil, Melted
- 2 Tsp Pure Vanilla Extract
- 6 oz (1 Bag) Fresh Spinach Leaves
- 2 Ripe Medium Bananas
Instructions:
- Preheat oven to 350 degrees F and grease or line a muffin tin with unbleached parchment muffin liners.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Blend spinach, banana, egg, maple syrup, coconut oil, vanilla, Maker powder, and water in a blender until smooth.
- Pour the wet mixture into the flour mixture and mix thoroughly to combine.
- Scoop batter into the prepared muffin tin (1/4 cup measuring cup works well for this).
- Bake for 20-25 minutes or until they pass the toothpick test (insert a toothpick, and it should come out clean).
Makes about 12 muffins.
